Savory Jalapeño Cheddar Biscuits
SAVOURY JALAPENO CHEDDAR BISCUITS
Serving Size: About 8-12 biscuits, depending on size
What you’ll need:
2 ¼ cup all-purpose flour
3 teaspoon baking powder
½ teaspoon baking soda
1 ½ teaspoon salt
½ cup cold butter, cut into cubes
¾ - 1 cup buttermilk
1 ½ cup grated sharp cheddar
3 jalapenos, finely chopped
1 tsp of smoked paprika (*optional)
1 tsp of garlic powder (*optional)
Directions:
1. Preheat your oven to 425F
2. Whisk together the flour, baking powder, baking soda, and optional spices if using.
3. Using either a hand mixer or food processor with a low speed, crumble in the butter with dry ingredients until a coarse dough forms (your dough should look like a plethora of pea-sized combined dough chunks). Stop mixing.
4. Add ¾ cup of buttermilk and on a low speed, gently mix until a more combined dough forms. If your mixture appears to dry or still too chunky, add more buttermilk as needed, one tablespoon at a time. Do not over mix.
5. Fold in the grated cheese and jalapenos.
6. On a floured and lined baking tray, use an ice-cream scoop to portion out each biscuit. Leave a 1 inch border between biscuits.
7. If you don’t have an ice-cream scoop, you can roll out the dough into a large cylindrical tube and cut 1.2-1 inch sections to place on your baking sheet.
8. Bake for about 10-17 minutes, or until the biscuits are golden on the top!
9. Let cool for 1-2 minutes until warm and enjoy!
