Handmade Gnocchi

 

HANDMADE GNOCCHI
Serving Size: 2-4 people

What you’ll need:

2 large white or Yukon Gold potatoes, peeled
1 cup flour
1 teaspoon salt

Directions:

1.       Boil the potatoes in salted water until soft

2.       Once soft, remove from the water and mash potatoes in a large mixing bowl

3.       Slowly incorporate up to 1 cup of flour and salt into the mashed potato (depending on potato size, you may need less or more flour)

4.       Knead the dough for two minutes until fully mixed

5.       Let the dough rest for 10 minutes

6.       Cut dough into 6 pieces

7.       Roll each dough piece one by one into a long sausage like tube and then cut into 1-inch size portions

8.       Roll pieces into flour so they do not become sticky and hard to manage. Optional: To get the styled ridges on the gnocchi, roll each little nugget along the back threads of a fork and gently push off the end of the fork to curve the dough

9.       Add the gnocchi to a pot of well salted boiling water. Cook for approximately 1-2 minutes, they will float when they are done!

10.   You can remove the gnocchi and eat just like this (simply with good olive oil, parmesean and salt and pepper if you like, or add your favourite sauce!)

11.   Or you can sauté it with anything you like in a hot pan like our Sautéed Kale and Garlic Cream Gnocchi

Pearing Suggestions: Pan fry to get a nice golden crisp and toss with garlic and tomatoes, then top with Parmesan and some finely chopped basil or parsley when you’re ready to eat!  

*Chef tip: Freeze the raw gnocchi to use later for a quick dinner! Just pop them into well salted boiling water straight from the freezer when you want to use them.
